Nutmeg is a spice used especially at Christmas time in Trinidad to flavour traditional black fruit cake and ‘Ponce a Crème’ beverage. The tree can be cultivated throughout the year in sunny or lightly-shaded areas in orchards and grows 9 – 15 metres tall. The first harvest takes place in 5 – 8 years. The fruits are smooth, ovoid and yellow, consisting of a single, purple-brown seed with a crimson red, lacy covering(aril). The spice is made by grinding the dried seed into powder. The aril is dried to produce another spice called mace which is used to flavour baked goods, meat, vegetables and for preserving and pickling.
