The Roucou tree can reach heights of 6 – 10 metres, with bearing taking place in 3 – 5 years.  The Roucou tree thrives in moist conditions and prefers partial to full sunlight. The Roucou fruits, (also known as annatto) are reddish-brown in colour, ‘ping-pong’ ball sized with soft spines. Its extracts have a distinctive orange- red colour and are popularly used as a food colouring.
