Topi Tambo, often called “Tippi Tambo” is a tuber that is enjoyed during Carnival and Lent. Topi Tambo is a small plant that reaches a height of 0.5 – 1metre, and produces small tuberous roots that resemble potatoes. For best results, Topi Tambo should be planted just before the start of the rainy season, in well drained soil, and harvested 9 – 12 months after planting. Boiling is a popular method of cooking this vegetable as it has a crunchy texture. The tough outer skin is peeled to reveal the the white fleshy tuber which is consumed.
